Creamy Almond-Caper Sauce

Top off your chicken or seafood with this zesty sauce! Fresh cilantro, lime juice and a pinch of cayenne pepper is sure to add some tang to your meal.

Ingredients

2 tablespoons unsalted butter

2 scallions, thinly sliced, including green tops

2 tablespoons capers, drained

1 clove garlic, minced

¾ cup sour cream

¼ cup sliced almonds

2 tablespoons chopped fresh cilantro

1½ teaspoons fresh lime juice

½ teaspoon fresh grated lime zest

Pinch of ground cayenne pepper

Directions

  1. Place almonds in a single layer in a dry skillet, and turn heat to medium. Toast for about 2 minutes, stirring occasionally.
  2. Melt the butter in a medium skillet over medium heat.
  3. Add the scallions, capers and garlic, and cook, stirring constantly, 1 to 2 minutes or until scallions are softened but retain their bright green color.
  4. Transfer mixture to a medium bowl and cool slightly. Stir in sour cream, almonds, cilantro, lime juice, lime zest and cayenne.
