Lamb, Turkey and Macadamia Sliders with Harvest Relish

Try this healthy twist on traditional hamurgers! Celery and macadamia nuts will give your burger extra crunch and flavor.

Ingredients

¾ pound ground white meat turkey

¾ pound ground lamb

1 small carrot, grated

⅓ cup diced macadamias

1 shallot, peeled and diced

1 tablespoon capers

1 teaspoon ground coriander

2 tablespoons chopped fresh coriander (cilantro)

Freshly ground pepper to taste

 

HARVEST FRUIT RELISH:

½ tsp olive oil

2 tabelspoons red onion, diced

2 plums, peaches or nectarines, diced

2 teaspoons sugar

2 tablespoons fresh rosemary leaves

1 tabelspoon red wine vinegar

2 tablespoons red wine

salt and pepper to taste

 

4 teaspoons soft goat cheese or Chevre

2 cups mixed lettuce or arugula

8 small rolls

Directions

  1. To make the burgers, combine all the ingredients in a bowl and mix well. Refrigerate at least 1 hour to allow flavors to develop.
  2. To make the relish, heat the oil in a saucepan and cook the onion over medium heat for 2-3 minutes or until onion is starting to soften.  Add the fruit and cook 2-3 minutes longer. Add remaining ingredients and cook until liquid is absorbed and relish is thick and glossy.  Keep warm or chill for use when needed.
  3. Preheat barbecue or grill pan and spray with non-stick spray.  Cook the burgers over a medium to high heat for 6-7minutes each side or until cooked as desired. 
  4. Spread rolls with goat cheese, top with the lettuce and burger and spoon over the hot or cold relish.
